One of our summer camp’s delicious farm to table recipes


Our chefs go to great lengths to provide delicious meals for our campers and staff. Each day of our 7-week session we serve a variety of dishes, including kid friendly fare, vegetarian and gluten free options, and whenever possible, farm to table meals. Last week I posted a photo on our brother-sister overnight camp’s Facebook wall of one of the delicious meals that Chef Kyla made, and a number of parents emailed me asking for the recipe. She sends her thanks for your interest, and is happy to share it with you here!


Please do note to it is helpful to have 3 large gardens growing fresh vegetables that you can pick from!


Chef Kyla’s Delicious Lentil Stuffed Squash Recipe
  • 4 acorn squash, quartered lengthwise
  • 4 tablespoons olive oil
  • 1 tablespoon salt
  • 3 cloves of garlic, minced
  • 4 tablespoons olive oil
  • 1 tablespoon salt
  • 1 tablespoon dried sage
  • 1 teaspoon cayenne pepper
  • 3 cups lentils
  • 5 cups of water
  • 1/2 cup nutritional yeast


1. Heat oven to 400 degrees

2. Rub squash pieces in olive oil and salt, put on pan skin side down, put in oven for 15 minutes or until squash meat is tender

3. Meanwhile, sautee garlic, salt and sage in olive oil on low heat until for several minutes

4. Add lentils to olive oil sauté and toss for several minutes

5. Add water, stir, reduce heat and let simmer til all water is absorbed

6. Remove lentils from heat, add nutritional yeast

7. Remove squash from oven

8. Divide lentil filling into the belly of each squash quarter 

9. Bake for ten minutes

10. Enjoy!
